Grana Padano Pork Meatballs
with Buttery Sweet Potato-Carrot Mash
Parenting is all about DIY. So let’s try some DIYK: Do It Yourselves, Kids! This recipe is an opportunity for kids to put a little muscle into it, by mashing sweet potatoes and grated carrots with butter to create a colourful side. They can help shape the meatballs from ground pork and grated Grana Padano cheese, which will roast alongside zucchini for a perfectly balanced meal.

Large pot
Strainer

Preparation

Mise en place
Preheat the oven to 450°F. Bring a large pot of salted water to a boil. Mince 2 garlic cloves. Using the side of your knife, smash the remaining garlic cloves. Peel and medium-dice the sweet potatoes. Grate the carrots. Quarter the zucchini lengthwise; cut crosswise into thirds.

Make the mash
Add the sweet potatoes, carrots and smashed garlic cloves to the pot of boiling water and boil, 14 to 16 min., until very tender. Reserving ½ cup cooking water, drain and return to the pot. Off the heat, add 2 tbsp butter. Mash, gradually adding the reserved cooking water until you achieve your desired consistency; season with S&P.

Prepare the meatballs
Meanwhile, in a large bowl, combine the pork, panko, ½ the cheese, 1 egg, ¾ of the spices and S&P. Form into 16 meatballs about the size of a golf ball.

Roast the meatballs & zucchini
On a lined sheet pan (use 2 sheet pans if necessary), toss the zucchini with the remaining spices and S&P. Add the meatballs* and drizzle with oil. Roast, 14 to 16 min., until browned and cooked through. In the final 5 min., add the minced garlic. Sprinkle the meatballs with the remaining cheese.

Plate your dish
Divide the mash, meatballs and zucchini between your plates. Bon appétit!
