Greek-Spiced Pork Chops
over Roasted Pepper Bulgur, String Beans & Tzatziki
A luscious layer of everybody’s favourite creamy, garlicky Greek-style dip lines these plates, ready for food and little fingers to dip into. Top it with a serving of fluffy bulgur zhuzhed up with roasted peppers for a tangy touch. Keep the string beans tender and crisp, and the pork chops tender and juicy, and the whole family has a winner on their hands. Tzatz all you gotta do, folks!

Preparation
Mise en place
Preheat the oven to 450°F. Remove the stem ends of the string beans. Thinly slice the roasted peppers.
Cook the pork
Pat the pork dry with paper towel; season with ⅔ of the spices and S&P. In a large pan, heat a drizzle of oil on medium-high. Add the pork* and cook, 3 to 5 min. per side, until browned and cooked through. Transfer to a cutting board and let rest for 5 min. before slicing against the grain.
Cook the bulgur
Meanwhile, in a medium pot, combine the bulgur, 1 ⅓ cups water and a big pinch of salt; bring to a boil. Reduce the heat, cover and simmer, 6 to 8 min., until the bulgur is tender and the water has been absorbed. Add the roasted peppers. Fluff the bulgur.
Roast the string beans
Meanwhile, on a lined sheet pan, toss the string beans with a drizzle of oil, the remaining spices and S&P. Roast, 5 to 8 min., until crisp-tender.
Plate your dish
Divide the tzatziki between your plates and spread out in a circular motion. Top with the bulgur, pork and string beans. Bon appétit!
