Grilled Honey-Sesame Halloumi Bowls
with Edamame Salad & Tamari Dressing
By the time Father’s Day rolls around, we just want to be outside as much as possible, preferably with a big bowl of plenty within easy reach. Halloumi is the world’s ultimate grilling cheese, so toss it on the barbie, with a one-two punch of sesame seeds and honey.
We will send you:
- 100g Matchstick carrots
- 120g Baby greens (lettuce mix, baby spinach, kale or arugula)
- 7g Honey
- 160g White rice
- 60ml Creamy, Thick Tamari & Garlic vinaigrette
- 150g Edamame (or green peas)
- 125g Halloumi
- 9g Black & white sesame seeds

You will need:
Medium pot
Microwave

BBQ (or pan)

Preparation

Cook the rice
- Heat the BBQ on high (or pan on medium-high), making sure to oil the grill first.
- In a medium pot, combine the rice, 1 ¼ cups water (double for 4 portions) and a big pinch of salt; bring to a boil.
- Reduce the heat, cover and simmer, 17 to 20 min., until the rice is tender and the water has been absorbed.
- Remove from the heat and let sit, covered, for 5 min. Fluff the rice.

Warm the edamame
- In a small bowl, combine the edamame and 1 tbsp water (double for 4 portions).
- Cover tightly with plastic wrap. Microwave, 1 to 2 min., until warmed through.
- Drain and add a drizzle of oil; season with S&P.

Grill the halloumi
- Slice the halloumi.
- Add to the BBQ (or pan) and grill, 1 to 2 min. per side, until golden and warmed through.
- Transfer to a plate and drizzle with the honey.
- Sprinkle with the sesame seeds.

Make the salad
- Meanwhile, in a medium bowl, combine the baby greens, carrots, edamame and ½ the vinaigrette.

Plate your dish
- Divide the rice between your bowls.
- Top with the salad and halloumi.
- Drizzle with the remaining vinaigrette. Bon appétit!
