with Honeyed Tomatillo Salsa

Hold some, fold some! Warm and easy-going, quesadillas are a perfect winter treat. This recipe gets extra depth from poblano pepper, mingled with Mexican-spiced beef. The salsa, featuring tangy green tomatillos, sautéed, garlicked and honey-sweetened, will become your new go-to.

  • 250g Canadian-raised lean ground beef
  • 1 Poblano pepper (or green pepper)
  • 225g Tomatillos
  • 2 Garlic cloves
  • 14g Honey
  • 60g Grated aged cheddar
  • 6 Wheat flour tortillas
  • 11g Mexican Moments spices (salt, chili powder, garlic, sugar, paprika, coriander seeds, black pepper, cumin, onion, oregano, lime oil)

Preparation

Cook the beef & poblano

  • Mince the garlic.

  • Halve, core and medium-dice the poblano.

  • In a large pan, heat a drizzle of oil on medium-high.

  • Add the beef*, poblano and ½ the garlic; season with ⅔ of the spices and S&P.

  • Cook, breaking up the meat, 4 to 6 min., until cooked through.

  • Transfer to a bowl and reserve the pan.

Make the salsa

  • Meanwhile, small-dice the tomatillos.

  • In the reserved pan, heat a drizzle of oil on medium-high.

  • Add the tomatillos, remaining spices and S&P. Sauté, adding 2 tbsp water (double for 4 portions) halfway, 4 to 5 min., until softened.

  • In the last min., add theremaining garlic.

  • Transfer to a medium bowl and add the honey and S&P; stir well.

  • Wipe out and reserve the pan.

Prepare the quesadillas

  • Place the tortillas on a dry work surface.

  • Top half of each tortilla with the beef-poblano pepper mixture and the cheese.

  • Fold in half and press lightly.

Cook the quesadillas

  • In the reserved pan, heat a drizzle of oil on medium.

  • Working in batches, add the quesadillas and cook, 1 to 2 min. per side, until golden brown.

Plate your dish

  • Divide the quesadillas between your plates.

  • Top with a spoonful of the salsa.

  • Serve the remaining salsa on the side. Bon appétit!
