Ground Beef & Cubanelle Pepper Quesadillas
with Honeyed Tomatillo Salsa
Hold some, fold some! Quesadillas are the perfect late-winter treat—a warm and easy-going way to connect to a sunny horizon. This recipe gets extra spark from cubanelle pepper, a popular Caribbean cultivar. It’s perfectly at home mingled with Mexican-spiced browned ground beef, and then tucked into wheat tortillas that are folded in half for cooking. The salsa, featuring tangy green tomatillos, sautéed, garlicked and honey-sweetened, will instantly become your new go-to.

- 225g Tomatillos
- 2 Garlic cloves
- 1 Cubanelle pepper
- 14g Honey
- 60g Grated aged cheddar
- 6 Wheat flour tortillas
- 11g Mexican Moments spices (salt, chili powder, garlic, sugar, paprika, coriander seeds, black pepper, cumin, onion, oregano, lime oil)

Preparation

Cook the beef & cubanelle pepper
Mince the garlic. Halve, core and medium-dice the cubanelle pepper. In a large pan, heat a drizzle of oil on medium-high. Add the beef*, cubanelle pepper and ½ the garlic; season with ⅔ of the spices and S&P. Cook, breaking up the meat, 4 to 6 min., until cooked through. Transfer to a bowl and reserve the pan.

Make the salsa
Meanwhile, small-dice the tomatillos. In the reserved pan, heat a drizzle of oil on medium-high. Add the tomatillos, remaining spices and S&P. Sauté, adding 2 tbsp water (double for 4 portions) halfway, 4 to 5 min., until softened. In the final min., add the remaining garlic. Transfer to a medium bowl and add the honey and S&P; stir well. Wipe out and reserve the pan.

Prepare the quesadillas
Place the tortillas on a dry work surface. Top half of each tortilla with the beef-cubanelle pepper mixture and the cheese. Fold in half and press lightly.

Cook the quesadillas
In the reserved pan, heat a drizzle of oil on medium. Working in batches, add the quesadillas and cook, 1 to 2 min. per side, until golden brown.

Plate your dish
Divide the quesadillas between your plates. Top with a spoonful of the salsa. Serve the remaining salsa on the side. Bon appétit!
