Put a lid on it, by broiling buttery mashed potatoes. Underneath, browned ground beef mingles with fresh corn niblets and green peas (and a dash of ketchup). A wealth of tastiness with budget intelligence.

Preparation

Boil the potatoes

  • Bring a medium pot of salted water to a boil.

  • Peel and medium-dice the potatoes.

  • Add to the pot of boiling water and boil, 14 to 16 min., until very tender.

  • Reserving ½ cup cooking water (double for 4 portions), drain and return to the pot.

  • Off the heat, add 2 tbsp butter (double for 4 portions).

  • Mash, gradually adding the reserved cooking water until you achieve your desired consistency; season with S&P.

Mise en place

  • Meanwhile, preheat the oven to broil.

  • Cut the corn kernels off the cob (shuck if necessary).

  • Halve, peel and small-dice the onion.

Cook the beef

  • In a large, oven-safe pan, heat a drizzle of oil on medium-high.

  • Add the onion and sauté, 1 min., until fragrant.

  • Add the beef and corn; season with the spices and S&P.

  • Cook, breaking up the meat, 5 to 7 min., until almost cooked through.

  • Add the peas and ketchup. Cook, stirring often, 1 to 2 min., until heated through and the beef* is cooked through.

Make the shepherd's pie

  • Top the beef with the mash and spread in a rustic fashion, making wavy designs with your fork.

  • Drizzle with oil and season with S&P.

  • Transfer to the oven and broil, 4 to 6 min., until beginning to brown.

  • Let sit for 2 min. before serving.
