Ground Beef Shepherd's Pie
with Fresh Corn & Peas
Put a lid on it, by broiling buttery mashed potatoes. Underneath, browned ground beef mingles with fresh corn niblets and green peas (and a dash of ketchup). A wealth of tastiness with budget intelligence.

- 450g Potatoes
- 1 Onion (or shallot)
- 1 Ear of corn
- 60ml Ketchup
- 150g Green peas
- 10g Sweet & Smoky BBQ spices (sugar, paprika, salt, onion, black pepper, garlic, cumin, parsley, cayenne pepper, coriander, thyme, oregano, rosemary, hickory flavour)

Large oven-safe pan
Medium pot

Preparation
Boil the potatoes
- Bring a medium pot of salted water to a boil.
- Peel and medium-dice the potatoes.
- Add to the pot of boiling water and boil, 14 to 16 min., until very tender.
- Reserving ½ cup cooking water (double for 4 portions), drain and return to the pot.
- Off the heat, add 2 tbsp butter (double for 4 portions).
- Mash, gradually adding the reserved cooking water until you achieve your desired consistency; season with S&P.
Mise en place
- Meanwhile, preheat the oven to broil.
- Cut the corn kernels off the cob (shuck if necessary).
- Halve, peel and small-dice the onion.
Cook the beef
- In a large, oven-safe pan, heat a drizzle of oil on medium-high.
- Add the onion and sauté, 1 min., until fragrant.
- Add the beef and corn; season with the spices and S&P.
- Cook, breaking up the meat, 5 to 7 min., until almost cooked through.
- Add the peas and ketchup. Cook, stirring often, 1 to 2 min., until heated through and the beef* is cooked through.
Make the shepherd's pie
- Top the beef with the mash and spread in a rustic fashion, making wavy designs with your fork.
- Drizzle with oil and season with S&P.
- Transfer to the oven and broil, 4 to 6 min., until beginning to brown.
- Let sit for 2 min. before serving.
Plate your dish
- Divide the shepherd's pie between your plates. Bon appétit!
*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
