Ground Beef Taco Bowls
with Black Beans & Cheddar
Kids can help assemble a Mexican-themed supper built out of elements they know and love from tacos. There’s warmly spiced beef and black beans, along with the fresh bite of chopped tomatoes and crunchy cukes. Lime-spiked labneh adds a luscious layer, complemented by grated cheese.

- 2 Tomatoes
- 2 Cucumbers
- 1 Lime
- 540ml Black beans (canned)
- 320g White rice
- 60g Grated aged cheddar
- 60ml Labneh
- 22g Mexican Moments spices (salt, chili powder, garlic, sugar, paprika, coriander seeds, black pepper, cumin, onion, oregano, lime oil)

Preparation
Cook the rice
- In a medium pot, combine the rice, 2 ½ cups water and a big pinch of salt; bring to a boil.
- Reduce the heat, cover and simmer, 17 to 20 min., until the rice is tender and the water has been absorbed.
- Remove from the heat and let sit, covered, for 5 min. Fluff the rice.
Cook the beef
- Meanwhile, in a large pan, heat a generous drizzle of oil on medium-high.
- Add the beef*; season with ½ the spices and S&P.
- Cook, breaking up the meat, 4 to 6 min., until browned and cooked through.
- Transfer to a bowl, leaving any browned bits in the pan. Reserve the pan.
Mise en place
- Medium-dice the tomatoes. In a small bowl, toss with a drizzle of olive oil and S&P.
- Medium-dice the cucumbers.
- Halve the lime; juice ½ and quarter the remaining ½.
Warm the black beans
- Drain and rinse the black beans.
- In the reserved pan, heat a drizzle of oil on medium.
- Add the black beans, remaining spices, 2 tbsp water and S&P.
- Sauté, scraping up any browned bits, 2 to 3 min., until warmed through.
Finish & serve
- In a medium bowl, whisk the labneh, lime juice, 2 tbsp water and S&P.
- Divide the rice between your bowls.
- Top with the beef, black beans, tomatoes and cucumbers.
- Dollop with the labneh.
- Garnish with the cheese and lime wedges. Bon appétit!
*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
