Preparation
Roast the bok choy
- Preheat the oven to 450°F.
- Remove the root ends of the bok choy; cut lengthwise into sixths (cut into eighths if large).
- On a lined sheet pan, toss with a drizzle of oil and S&P.
- Roast, flipping halfway, 12 to 15 min., until tender.
Cook the beef
- Meanwhile, in a large, high-sided pan, heat a drizzle of oil on medium-high.
- Add the beef*; season with S&P.
- Cook, breaking up the meat, 4 to 6 min., until cooked through.
Mise en place
- Thinly slice the scallion crosswise, separating the white bottom and green top.
- Halve the lime; juice ½ and quarter the remaining ½.
Make the fried rice
- To the pan of beef, add the white bottom of the scallion. Cook, stirring often, 30 sec. to 1 min., until fragrant.
- Add the lime juice and teriyaki glaze. Cook, stirring often, 30 sec. to 1 min., until combined.
- Add the rice and garlic. Cook, pressing down, 2 to 3 min., until the rice begins to crisp.
- Add the peas and S&P. Cook, stirring often, 1 to 2 min., until warmed through.
Plate your dish
- Divide the fried rice between your plates.
- Top with the bok choy.
- Garnish with the green top of the scallion and lime wedges. Bon appétit!
