No time? No problem. With some help from pre-cooked rice, this crowd-pleaser comes together in 15 minutes. The key is to press the grains until slightly crisped, in an aromatic mix of ground beef and peas topped with roasted bok choy.

  • 120ml Teriyaki glaze

Preparation

Roast the bok choy

  • Preheat the oven to 450°F.

  • Remove the root ends of the bok choy; cut lengthwise into sixths (cut into eighths if large).

  • On a lined sheet pan, toss with a drizzle of oil and S&P.

  • Roast, flipping halfway, 12 to 15 min., until tender.

Cook the beef

  • Meanwhile, in a large, high-sided pan, heat a drizzle of oil on medium-high.

  • Add the beef*; season with S&P.

  • Cook, breaking up the meat, 4 to 6 min., until cooked through.

Mise en place

  • Thinly slice the scallion crosswise, separating the white bottom and green top.

  • Halve the lime; juice ½ and quarter the remaining ½.

Make the fried rice

  • To the pan of beef, add the white bottom of the scallion. Cook, stirring often, 30 sec. to 1 min., until fragrant.

  • Add the lime juice and teriyaki glaze. Cook, stirring often, 30 sec. to 1 min., until combined.

  • Add the rice and garlic. Cook, pressing down, 2 to 3 min., until the rice begins to crisp.

  • Add the peas and S&P. Cook, stirring often, 1 to 2 min., until warmed through.

Plate your dish

  • Divide the fried rice between your plates.

  • Top with the bok choy.

  • Garnish with the green top of the scallion and lime wedges. Bon appétit!
