It’s planting season, so let’s go plant-based. Mix and match each mouthful of these nourishing bowls with an array of tastes and textures. Spiced and grated tofu gets splashed with pungent hoisin and rice vinegar as it sizzles, joined by bright green edamame beans to give you more to munch on. Kimchi creates a sharp contrast with its fermented flavours. Set that off against slices of sweet pear and baby greens, over a base of elegant jasmine rice.

  • 1 Pear
  • 1 Block of tofu (non-GMO)
  • 30ml Rice vinegar
  • 100g Edamame (or green peas)
  • 33g Organic kimchi
  • 160g Jasmine rice
  • 60ml Hoisin sauce
  • 12g Mellow Sesame spices (brown sugar, sea salt, white sesame seeds, garlic, ginger, black pepper)

Cook the rice
In a medium pot, combine the rice, 1 ½ cups water (double for 4 portions) and a big pinch of salt; bring to a boil. Reduce the heat, cover and simmer, 14 to 16 min., until the rice is tender and the water has been absorbed. Remove from the heat and let sit, covered, for 5 min. Fluff the rice.

Mise en place
Meanwhile, roughly chop the kimchi. Grate the tofu. Mince the garlic. In a medium bowl, combine the tofu, ⅔ of the garlic and ⅔ of the spices.

Cook & coat the tofu
In a large pan, heat a thin layer of oil on medium. Add the tofu and cook, stirring frequently, 6 to 8 min., until beginning to brown. Add ⅔ of the hoisin, ½ the vinegar, the edamame and 2 tbsp water (double for 4 portions). Cook, stirring frequently, 1 to 2 min., until combined.

Dress the baby greens
In a large bowl, combine the remaining vinegar, garlic and spices, and 1 tbsp oil (double for 4 portions). Add the baby greens; toss well.

Finish & serve
Core and thinly slice the pear. Divide the rice between your bowls. Top, side by side, with the tofu, pear, kimchi and baby greens. Drizzle with the remaining hoisin. Bon appétit!
