Honey-Miso Butter Chicken
with Veggieful Rice
Kids love salty almost as much as they love sweet. They’ll get their fix of both when white miso and honey come together to glaze chicken breasts. The rice is jammed full of good-for-you green stuff, from edamame to kale to leeks.

- 4 Canadian-raised chicken breasts (air chilled)
- 1 Bunch of kale
- 150g Sliced leeks
- 150g Edamame (or green peas)
- 320g Jasmine rice
- 20g White miso paste
- 14g Honey
- 12g Mellow Sesame spices (brown sugar, sea salt, white sesame, garlic, canola oil, ginger, paprika flavour, black pepper, cellulose)

Preparation

Roast the chicken
- Preheat the oven to 450°F.
- In a small bowl, microwave 3 tbsp butter, in 15 sec. increments, until melted. Add the miso, honey and black pepper; whisk well.
- Pat the chicken* dry; rub with ¼ of the spices.
- Arrange on a lined sheet pan and roast, 10 to 15 min., until partially cooked.
- Flip and brush with the miso-butter glaze.
- Roast, 10 to 12 min., until cooked through.

Start the rice
- Meanwhile, remove the kale leaves from the stems; roughly chop the leaves.
- In a large pot, heat 1 tbsp butter and a drizzle of oil on medium-high.
- Add the kale, leeks and 2 tbsp water. Cook, covered, 2 to 3 min., until wilted.
- Add the rice, edamame and remaining spices.
- Sauté, 30 sec. to 1 min., until warmed through.

Finish the rice
- To the pot, add 3 cups water and a pinch of salt; bring to a boil.
- Reduce the heat, cover and simmer, 14 to 16 min., until the rice is tender and the water has been absorbed.
- Remove from the heat and let sit, covered, for 5 min. Fluff the rice.

Plate your dish
- Divide the rice between your plates.
- Top with the chicken (slice beforehand if desired). Bon appétit!
*Health Canada recommends cooking poultry to a minimum internal temperature of 74°C.
