Keto: Beef Keftedes
with Sautéed Peppers, Eggplant & Tzatziki
Come over to the cozy side with a dinner featuring keto-friendly keftedes. These Greek-style meatballs star protein-rich ground beef studded with our herby, peppery, warmly spiced Mediterranean Shores seasonings. They’ll lap up some creaminess from a swirl of tzatziki on each plate as you drag your fork through it. Flank them with bite-size morsels of sautéed sweet peppers and eggplant tossed with fresh dill. Bon appétit, or kalí óreksi, as they say in Greece.

- 15ml Minced garlic
- 1 Bunch of dill
- 1 Eggplant
- 2 Sweet peppers
- 90g Garlic-cucumber yogurt (tzatziki)
- 10g Mediterranean Shores spices (paprika, garlic, salt, roasted garlic, black pepper, sun-dried tomato, tomato, red bell pepper, oregano, mustard, rosemary)

Preparation
Mise en place
Medium-dice the eggplant. Core and medium-dice the sweet peppers. Pick the dill fronds off the stems; roughly chop the fronds.
Prepare & cook the keftedes
In a large bowl, combine the beef, ½ the garlic, ½ the dill, ⅔ of the spices and S&P. Form into 10 meatballs (double for 4 portions) about the size of a golf ball. In a medium pan, heat a drizzle of oil on medium-high. Add the keftedes* and cook, partially covered, turning occasionally, 9 to 11 min., until browned and cooked through.
Sauté the vegetables
Meanwhile, in a large pan, heat a generous drizzle of oil on medium-high. Add the eggplant and sauté, 1 to 2 min., until beginning to soften. Add the sweet peppers and remaining garlic. Sauté, 3 to 5 min., until slightly softened; season with the remaining spices and dill, and S&P.
Plate your dish
Divide the tzatziki between your plates and spread out in a circular motion. Top with the keftedes and vegetables. Bon appétit!
