with Sweet Pepper Miscela, Sautéed Veggies & Parmesan
Can you really enjoy a quick Italian-themed meal minus the carbs? Our answer is a resounding sì, per favore! Cue up florets of broccoli, halved cherry tomatoes and convenient pre-chopped garlic for a speedy sauté. Sear strips of beef with herbed seasonings until browned and fork-tender, then toss them with sweet pepper miscela for contrast. Finish the dish with a classy covering of shaved Parmesan. Perfetto! Mise en place
Halve the broccoli (quarter if large). Halve the tomatoes.
Cook the vegetables
In a large pan, heat a drizzle of oil on medium-high. Sauté the broccoli, 5 to 7 min., until beginning to brown. Add ¼ cup water (double for 4 portions) and cook, partially covered, stirring occasionally, 2 to 3 min., until the water has evaporated and the broccoli is tender. In the final min., add the tomatoes and garlic. Cook, stirring occasionally, until warmed through; season with ½ the spices and S&P.
Cook & coat the beef
Meanwhile, in a second large pan, heat a generous drizzle of oil on high. Pat the beef* dry with paper towel; season with the remaining spices and S&P. Cook, 1 to 2 min. per side, until cooked through. Using tongs, transfer to a medium bowl and add the sweet pepper miscela; toss well.
Plate your dish
Divide the beef and vegetables between your plates. Garnish with the cheese. Bon appétit!
