over Ranch-Spiced Cauliflower ‘Rice’
Let’s go keto! You don’t have to follow the diet to enjoy a carb-conscious meal. Up front and centre, you’ve got a plentiful portion of ground beef, browned with tender morsels of butternut squash and lush with demi-glace and wilted leafy greens. You’ll scoop it out over a mound of riced cauliflower seasoned with the irresistible chive-onion-herb mix of ranch seasoning. Add a garnish of freshly chopped scallion for reinforcement.

Preparation
Sauté the cauliflower rice
Thinly slice the scallion, separating the white bottom and green top. In a medium pan, heat a drizzle of oil on medium. Add the white bottom of the scallion and sauté, 30 sec. to 1 min., until fragrant. Increase the heat to medium-high and add the cauliflower rice. Sauté, 6 to 8 min., until softened; season with ⅓ of the spices and S&P. Off the heat, add 1 tbsp butter (double for 4 portions); stir well.
Start the skillet
Meanwhile, in a large pan, heat a drizzle of oil on medium-high. Add the squash and sauté, 1 to 2 min., until beginning to soften. Add the beef; season with the remaining spices and S&P. Cook, breaking up the meat, 4 to 6 min., until the squash is tender and the beef* is cooked through.
Finish the skillet
To the pan of squash and beef, add the demi-glace and ¼ cup water (double for 4 portions); bring to a boil. Reduce the heat to low and cook, stirring occasionally, 2 to 3 min., until the sauce has slightly thickened. Add the spinach and cook, stirring occasionally, 1 to 2 min., until wilted.
Plate your dish
Divide the cauliflower rice between your plates. Top with the skillet. Garnish with the green top of the scallion. Bon appétit!
