Bite-size chunks of seared chicken join loads of good green veggies for a party in your bowl. And when there’s pasta involved, especially teeny-weeny grains of orzo that look a lot like rice, the kids definitely want an invite! Offering a comforting risotto-like consistency, this dish features broccoli conveniently cooked in the same pot, and a side of string beans sautéed to tender-crisp. With zesty, garlicky, cheesy flavours swirling around, it’s time to party down!

Preparation

Cook the chicken
Pat the chicken dry with paper towel and cut into bite-size pieces; season with ⅔ of the spices and S&P. In a large pot (or large high-sided pan), heat a generous drizzle of oil on medium-high. Add the chicken* and cook, turning occasionally, 4 to 6 min., until browned and cooked through. Transfer to a plate, leaving any browned bits in the pot. Reserve the pot.

Mise en place
Meanwhile, using the flat side of your knife, smash the garlic cloves. Zest and quarter the lemon. Roughly chop the broccoli. Remove the stem ends of the string beans.

Start the orzotto
In the reserved pot, heat a drizzle of oil on medium-high. Add the orzo and 1 garlic clove. Sauté, 1 to 2 min., until fragrant. Add the demi-glace, 2 ½ cups water and S&P. Cook, scraping up any browned bits, 30 sec. to 1 min., until combined; bring to a boil. Reduce the heat to simmer and cook, stirring occasionally, 6 to 7 min., until partially cooked. Add the broccoli, chicken and 1 ½ cups water. Cook, stirring occasionally, 6 to 7 min., until most of the liquid has been absorbed. If dry, gradually add ¼ cup water until you achieve your desired consistency.

Cook the string beans
Meanwhile, in a large pan, heat a drizzle of oil on medium-high. Add the string beans and remaining garlic clove. Sauté, 3 to 5 min., until beginning to soften. Add 2 tbsp water, the remaining spices and S&P. Cook, partially covered, 1 to 2 min., until crisp-tender. Add the juice from the lemon wedges (start with ½); toss well. Remove the garlic clove.

Finish the orzotto & serve
To the pot of orzotto, add the cheese, 1 tbsp butter, the lemon zest and S&P; stir well. Remove the garlic clove. Divide the orzotto between your bowls. Serve the string beans on the side. Bon appétit!
