Pâté chinois, otherwise known as shepherd’s pie, is the dictionary definition of comfort food—whether or not it’s made with meat. Under this mashed potato topping, you’ll find a vegetarian mélange of carrots, peas, corn niblets and lentils laced with mellow BBQ sauce.

  • 30ml BBQ sauce
  • 540ml Lentils (canned)
  • 150g Green peas
  • 30ml Ketchup
  • 3g Sweet paprika
  • 30ml Vegetable demi-glace
  • 250ml Whole corn kernels

Preparation

Make the mash

  • Bring a medium pot of salted water to a boil.

  • Peel and medium-dice the potatoes.

  • Add to the pot of boiling water and boil, 14 to 16 min., until very tender.

  • Reserving ½ cup cooking water (double for 4 portions), drain and return to the pot.

  • Off the heat, add 2 tbsp butter (double for 4 portions).

  • Mash, gradually adding the reserved cooking water until you achieve your desired consistency; season with S&P.

Start the pâté Chinois

  • Meanwhile, preheat the oven to broil.

  • Drain and rinse the lentils; mash ½.

  • In a medium, oven-safe pan, heat a generous drizzle of oil on medium-high.

  • Add the carrots and sauté, 4 to 6 min., until beginning to soften.

  • Add the onions and sweet paprika. Sauté, 1 to 2 min., until fragrant.

  • Add the lentils, BBQ sauce, ketchup, demi-glace, ¼ cup water (double for 4 portions) and S&P.

  • Cook, stirring often, 2 to 3 min., until combined.

Finish the pâté Chinois

  • Top the lentil mixture with the peas, corn and mash. Spread in a rustic fashion, making wavy designs with your fork.

  • Transfer to the oven and broil, 4 to 6 min., until beginning to brown.

  • Let sit for 2 min. before serving.
