Explore a landscape of tastes and sensations as you dig into this Thai-inspired feast that follows keto principles. The perfume of lemongrass, galangal and tropical spices lingers on the tongue with each bite of chicken breast, which you’ll grill to tender perfection on the barbecue. Find just as much excitement in the accompanying slaw, made up of carrots, cucumbers and cabbage, percolated with sharp ginger, fresh cilantro and the crunchy crumble of chopped peanuts.

- 100g Matchstick carrots
- 15ml Ginger paste
- 1 Bunch of cilantro
- 2 Cucumbers
- 30ml Rice vinegar
- 25g Chopped peanuts
- 9.5g Lush Lemongrass spices (sesame seeds, garlic, onion, cinnamon, nutmeg, coriander, cayenne pepper, lemongrass, galangal, turmeric, salt)

Preparation

Mise en place
Heat the BBQ on high, making sure to oil the grill first. Halve the cucumbers lengthwise; thinly slice crosswise on an angle. Roughly chop the cilantro leaves and stems.

Grill the chicken
Pat the chicken* dry with paper towel; season with ⅔ of the spices and S&P. Add to the BBQ (or to a grill pan heated with a drizzle of oil on medium-high, partially covered) and grill, 6 to 8 min. per side, until cooked through. Transfer to a cutting board and let rest for 5 min. before slicing against the grain.

Make the slaw
Meanwhile, in a large bowl, combine the vinegar, ginger (start with ½), 2 tbsp oil (double for 4 portions) and the remaining spices. Add the cabbage, carrots, cucumbers, cilantro, peanuts and S&P; toss well.

Plate your dish
Divide the slaw between your plates. Top with the chicken. Bon appétit!
