Take a tip from Trinidadian cooking and put mango to work in a spicy-hot condiment that doubles as a salad. Toss slices of sunny fruit with cucumbers and cilantro, splashing in dashes of white balsamic vinegar and sambal oelek for kick. Roasted broccoli and juicy golden-seared chicken breasts give off a gentle whiff of hickory smoke from sweet, peppery BBQ seasonings. Paleo eats with a Caribbean beat.

- 30ml White balsamic vinegar
- 15ml Sambal oelek

Preparation
Roast the broccoli
Preheat the oven to 450°F. On a lined sheet pan, toss the broccoli (halve if large) with a drizzle of oil, ⅓ of the spices and S&P. Roast, stirring halfway, 14 to 18 min., until tender.
Cook the chicken
Meanwhile, pat the chicken dry with paper towel; season with the remaining spices and S&P. In a large pan, heat a drizzle of oil on medium-high. Add the chicken* and cook, partially covered, 6 to 8 min. per side, until cooked through. Transfer to a cutting board and let rest for 5 min. before slicing against the grain.
Mise en place
Meanwhile, halve the cucumbers lengthwise; thinly slice on an angle. Peel and pit the mango; thinly slice lengthwise. Roughly chop the cilantro leaves and stems.
Make the chow
In a large bowl, combine the vinegar and 2 tbsp oil (double for 4 portions). Add the cucumbers, mango, cilantro, sambal oelek and S&P; toss well.
Plate your dish
Divide the chicken, broccoli and chow between your bowls. Bon appétit!
