He shoots, you score! This winning recipe gets the nod from Nick Suzuki, Montreal Canadiens captain. It’s cheesy, it’s creamy and it’s breezy to make. A classic among oven-baked casseroles, chicken divan is nothing short of divine. Everyone will love biting into tender pieces of seared and shredded chicken breasts, quartered mushrooms and little trees of broccoli, doled out with a helping of rice. All the pieces fit together seamlessly in a saucy mix of sour cream and aged cheddar cheese, under a golden glow of panko crumbs.

Preparation

Cook & shred the chicken
Preheat the oven to 450°F. Pat the chicken dry with paper towel; season with S&P. In a large, oven-safe pan, heat a drizzle of oil on medium-high. Add the chicken* and cook, partially covered, 6 to 8 min. per side, until cooked through. Transfer to a bowl and reserve the pan. Using two forks, shred the chicken.

Cook the rice
Meanwhile, in a medium pot, combine the rice, 2 ½ cups water and a big pinch of salt; bring to a boil. Reduce the heat, cover and simmer, 17 to 20 min., until the rice is tender and the water has been absorbed. Remove from the heat and let sit, covered, for 5 min. Fluff and keep warm.

Mise en place
Meanwhile, quarter the mushrooms (cut into sixths if large). Halve the broccoli if large. In a small bowl, microwave 3 tbsp butter, in 15 sec. increments, until melted. Add the panko, a pinch of the spices and S&P; stir well.

Start the chicken divan
In the reserved pan, heat a drizzle of oil on medium-high. Add the mushrooms and broccoli. Sauté, 2 to 3 min., until beginning to brown. Add 1 tbsp butter and the remaining spices. Sauté, 2 to 3 min., until fragrant. Add the demi-glace and 1 cup water. Cook, stirring frequently, 1 to 2 min., until thickened.

Finish the chicken divan
To the pan of vegetables, add the chicken, sour cream, ⅔ of the cheese and S&P; stir well. Top with the remaining cheese. Transfer to the oven and bake, 12 to 15 min., until bubbling and the cheese has melted. Remove from the oven and switch the oven to broil. Top with the panko mixture. Broil, 2 to 3 min., until the panko is golden brown.

Plate your dish
Divide the rice between your plates. Top with the chicken divan. Bon appétit!
