With a little Nordic know-how, rolled oats get these ground beef meatballs rolling in a nutritious direction. They’re luxuriously covered in a cream and whole-grain mustard sauce, and served with roasted Brussels sprouts and gorgeously striped Chioggia beets—a true main character veg.

  • 1 Garlic clove
  • 30ml Vegetable demi-glace
  • 15ml Whole-grain mustard
  • 40g Rolled oats
  • 60ml Heavy cream
  • 9g Zesty Herbs spices (salt, garlic, dried carrots, spice, red bell pepper, sugar, curry powder (mustard), canola oil, onion, black pepper, lemon oil, citric acid)

Preparation

Roast the vegetables

  • Preheat the oven to 450°F.

  • Halve the Brussels sprouts lengthwise.

  • Peel and halve the beets; cut into ¼ inch wedges.

  • On a lined sheet pan, toss with a drizzle of oil, ¼ of the spices and S&P.

  • Roast, stirring halfway, 16 to 18 min., until tender.

  • Meanwhile, mince the garlic.

Prepare the meatballs

  • In a large bowl, combine the beef, garlic, oats, ½ the remaining spices, 1 egg (double for 4 portions) and S&P.

  • Form into 8 meatballs (double for 4 portions).

Cook the meatballs & make the sauce

  • In a medium pan, heat a drizzle of oil on medium-high.

  • Add the meatballs* and cook, partially covered, turning occasionally, 8 to 10 min., until browned and cooked through.

  • Add the mustard, demi-glace, cream, remaining spices, 2 tbsp water (double for 4 portions) and S&P.

  • Cook, stirring occasionally, 2 to 3 min., until the sauce is slightly reduced and the meatballs are coated.

Plate your dish

  • Divide the meatballs and vegetables between your plates.

  • Spoon the sauce over the meatballs. Bon appétit!
