One-Pan Ground Pork & Pearl Couscous Skillet
with Butternut Squash, Broccoli & Aged White Cheddar
When you only have to count to one, you know it’s gonna be easy! A single pan is all you need from start (browning up ground pork) to finish (swirling in butter and grated white cheddar cheese). In between, you’ll load up on all sorts of goodness. Our bright and herby Mediterranean Shores seasoning shines on pre-cubed butternut squash, multicoloured pearls of couscous and broccoli florets, the only thing that needs to be cut down to size.

- 15ml Minced garlic
- 200g Broccoli florets
- 200g Diced butternut squash
- 165g Multicoloured pearl couscous
- 60ml Vegetable demi-glace
- 60g Grated aged cheddar
- 20g Mediterranean Shores spices (paprika, garlic, salt, roasted garlic, black pepper, sun-dried tomato, tomato, red bell pepper, oregano, mustard, rosemary)

Preparation
Start the skillet
In a large, high-sided pan, heat a generous drizzle of oil on medium. Add the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the pork; season with ½ the spices and S&P. Cook, breaking up the meat, 2 to 3 min., until browned and partially cooked.
Continue the skillet
To the pan of pork, add the squash. Cook, stirring occasionally, 2 to 3 min., until the pork* is cooked through and the squash is tender.
Finish the skillet
Quarter the broccoli. To the pan of pork and squash, add the couscous; stir gently to separate. Add 2 ½ cups water (double for 4 portions), the demi-glace, remaining spices and S&P. Cook, stirring occasionally, 4 to 6 min., until partially cooked. Add the broccoli and cook, stirring occasionally, 4 to 6 min., until tender. Off the heat, add 2 tbsp butter (double for 4 portions) and the cheese; stir well.
Plate your dish
Divide the skillet between your plates. Bon appétit!
*Health Canada recommends cooking ground pork to a minimum internal temperature of 71°C.
