One-Pan Pork Sausage & Veggie Skillet Bake
with Creamy Maple Sauce
Mad skills for a mad skillet! This recipe streamlines suppertime with a one-pan approach to cooking. Start your chunky potatoes and carrots in there until good and browned, while zucchini waits its turn so it doesn’t get overcooked. Plop down our mild pork sausages to finish baking in the oven until bursting with juices. The capper is a delectably creamy sauce made with maple syrup, for a nod to sugaring off season.

- 900g Baby potatoes
- 300g Carrots (orange or multicoloured)
- 2 Shallots (or onions)
- 2 Zucchini (green, yellow or heirloom)
- 60ml Vegetable demi-glace
- 30ml Maple syrup
- 45ml Heavy cream
- 18g Citrus Garden spices (paprika, salt, black pepper, garlic, sugar, onion, lemon peel, dill, coriander, rosemary, marjoram, parsley, cayenne pepper, sunflower oil, lemon flavour, chili pepper, bay leaf, lemon oil)

Preparation
Mise en place
Preheat the oven to 450°F. Halve the potatoes (quarter if large). Peel and quarter the shallots. Halve the zucchini and carrots lengthwise; cut into ½ inch pieces on an angle. In a small bowl, make the sauce by combining the cream, maple syrup, demi-glace, 4 tbsp water and ⅓ of the spices.
Start the skillet bake
In a large, high-sided, oven-safe pan, heat a generous drizzle of oil on medium-high. Add the potatoes, shallots, carrots and remaining spices. Cook, partially covered, stirring occasionally, 5 to 7 min., until lightly browned; season with S&P. Add the zucchini; stir well. Top with the sausages, transfer to the oven and bake, 8 to 10 min., until partially cooked.
Finish the skillet bake
When the skillet bake is partially cooked, remove from the oven and add the sauce; stir well. Bake, 8 to 10 min., until the vegetables are tender, the sausages* are cooked through and the sauce has slightly reduced.
Plate your dish
Divide the skillet bake (slice the sausages beforehand if desired) between your bowls. Spoon the sauce over. Bon appétit!
