One-Pot Green Veggie Pasta Primavera
with Grana Padano
It's easy being green, when you have broccoli, zucchini and peas ready to go. This primavera is all set for a spring evening, with loads of veg, penne and a squeeze of lemon. A good dish for kids to grow their kitchen skills.

- 1 Lemon
- 1 Head of broccoli
- 4 Garlic cloves
- 340g Penne rigate
- 150g Green peas
- 60ml Vegetable demi-glace
- 50g Grana Padano (contains rennet)
- 15g Olive Branch spices (garlic, red pepper bell, dried black olives, basil, oregano, salt, parsley, lemon powder (maltodextrin, lemon puree, citric acid, sugar, lemon juice), canola oil, black pepper, cellulose fiber (anti-caking agent))

Preparation

Boil the pasta
- Bring a large pot of salted water to a boil.
- Add the pasta; stir gently to separate.
- Boil, 3 to 6 min., until al dente.
Reserving 1 cup cooking water, drain and toss with a drizzle of oil to prevent sticking.- Reserve the pot.

Mise en place
- Meanwhile, cut the broccoli head into bite-size florets.
- Halve the zucchini lengthwise; cut crosswise into ½ inch pieces.
- Halve the lemon; juice ½ and quarter the remaining ½.
- Mince the garlic.

Sauté the vegetables & make the sauce
- In the reserved pot, heat a drizzle of oil on medium-high.
- Add the broccoli and S&P. Sauté, 4 to 5 min., until slightly softened.
- Add the zucchini, garlic, peas, spices and S&P. Sauté, 2 to 3 min., until slightly softened.
- Add the demi-glace and ⅔ of the reserved cooking water; bring to a boil.
- Reduce to a simmer and cook, stirring occasionally, 2 to 3 min., until thickened.
- In the last min., add 2 tbsp butter, the lemon juice and ½ the cheese; stir well.

Combine the pasta
- To the pot, add the pasta and S&P.
- Cook, stirring often, 1 to 2 min., until combined and warmed through.
- If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.

Plate your dish
- Divide the pasta between your bowls.
- Garnish with the remaining cheese and the lemon wedges. Bon appétit!
