Oven-Baked Tilapia with Crispy Grana Padano Topping
Green Beans, Potatoes & Lemon Wedges
Crisp it and they will come! The top coat on these fish fillets has what it takes to lure everyone to the table. It’s made with light, crispy panko crumbs and grated Grana Padano, applied over butter seasoned with our simple but effective Herby Sidekick blend. Pop the tilapia into the oven, which is conveniently where you’ll cook those sheet pan veggies: yummy green beans and baby potatoes. Lemon up at serving time.

Preparation

Start the vegetables
Preheat the oven to 450°F. Medium-dice the potatoes. On 2 lined sheet pans, toss with a drizzle of oil, ⅓ of the spices and S&P. Roast, 16 min., until partially cooked.

Mise en place
Meanwhile, in a small bowl, microwave 4 tbsp butter, in 15 sec. increments, until melted. Add a pinch of the remaining spices and S&P; stir well. Remove the stem ends of the green beans. In a medium bowl, combine the green beans, a drizzle of oil, ½ the remaining spices and S&P. Quarter the lemon.

Prepare the tilapia
In a second medium bowl, combine the panko, cheese, 2 tbsp oil, the remaining spices and S&P. Pat the tilapia dry with paper towel; season with S&P. Brush with the spiced butter. Top with the panko mixture (pressing to adhere).

Finish the vegetables & bake the tilapia
When the potatoes are partially cooked, remove from the oven and add the tilapia and green beans. Bake, 7 to 12 min., until the vegetables are tender and the tilapia* is cooked through.

Plate your dish
Divide the vegetables and tilapia between your plates. Garnish with the lemon wedges. Bon appétit!
