Pesto & Cherry Tomato Fresh Cheese Tortellini
with Sharp Green Side Salad
Tortellini, meenie, miney, mo... what will kids choose for dinner? When fresh cheese-stuffed pasta is an option, there will always be takers. All these toothsome packages require is a simple sauce made of sautéed cherry tomatoes (zhuzhed with white balsamic) combined with an herby blast of basil pesto. A leafy green side salad comes to life in a fast Dijon mustard vinaigrette. Tell them to be tableside in 15 minutes.

- 30ml Basil pesto
- 30ml White balsamic vinegar
- 15ml Dijon mustard
- 700g Fresh three-cheese tortellini (contains lipase)
- 30ml Vegetable demi-glace

Preparation
Boil the pasta
Bring a large pot of salted water to a boil. Add the pasta; stir gently to separate. Boil, stirring occasionally, 4 to 6 min., until al dente. Reserving ½ cup cooking water, drain and toss with a drizzle of oil to prevent sticking. Wipe out and reserve the pot.
Make the salad
Meanwhile, in a large bowl, combine the mustard, ½ the vinegar, 4 tbsp olive oil and a big pinch of S&P. Add the baby greens; toss well.
Start the sauce
Halve the tomatoes. In the reserved pot, heat a drizzle of oil on medium-high. Sauté the tomatoes, 1 to 2 min., until bright red and beginning to soften. Add the remaining vinegar and sauté, 30 sec. to 1 min., until evaporated. Add the demi-glace and 4 tbsp butter. Cook, stirring occasionally, 30 sec., until melted.
Finish the sauce & combine the pasta
To the pot of sauce, add the pasta, pesto, ½ the reserved cooking water and S&P; bring to a boil. Reduce the heat to simmer and cook, stirring frequently, 1 to 2 min., until combined and warmed through. If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.
Plate your dish
Divide the pasta between your plates. Serve the salad on the side. Bon appétit!
