Ponzu Ground Beef & Veggie Stir-Fry
with Crispy Onions & Jasmine Rice
The beauty of a stir-fry is throwing it all together in a pan… and bam, cut to your family happily munching away. Set out in 20 minutes, sesame ground beef, shards of sweet pepper, just-wilted baby bok choy and edamame get squirts of ponzu and sweet soy for lip-smacking servings.
We will send you:
- 510g Canadian-raised lean ground beef
- 1 Sweet pepper
- 2 Scallions
- 340g Baby bok choy
- 150g Edamame (or green peas)
- 320g Jasmine rice
- 60ml Sweet soy sauce
- 60ml Ponzu lime sauce
- 6g Crispy onions
- 24g Mellow Sesame spices (brown sugar, sea salt, white sesame seeds, garlic, sunflower oil, paprika oleoresin, ginger, black pepper)

Preparation
Cook the rice
- In a medium pot, combine the rice, 3 cups water and a big pinch of salt; bring to a boil.
- Reduce the heat, cover and simmer, 14 to 16 min., until the rice is tender and the water has been absorbed.
- Remove from the heat and let sit, covered, for 5 min. Fluff the rice.
Cook the beef
- Meanwhile, thinly slice the scallions crosswise, separating the white bottoms and green tops.
- In a large, high-sided pan, heat a drizzle of oil on medium-high.
- Add the beef* and white bottoms of the scallions; season with ½ the spices and S&P.
- Cook, breaking up the meat, 4 to 6 min., until cooked through.
- Transfer to a bowl. Wipe out and reserve the pan.
Mise en place
- Meanwhile, halve, core and thinly slice the sweet pepper lengthwise.
- Remove the root ends of the bok choy; halve lengthwise (quarter if large).
Sauté the vegetables
- In the reserved pan, heat a drizzle of oil on medium-high.
- Add the sweet pepper, bok choy and edamame. Sauté, 5 to 6 min., until tender; season with the remaining spices.
Make the stir-fry
- To the pan of vegetables, add the beef, soy sauce and ponzu.
- Cook, stirring often, 1 to 2 min., until combined.
Plate your dish
- Divide the rice between your bowls.
- Top with the stir-fry.
- Garnish with the crispy onions and green tops of the scallions. Bon appétit!
*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
