A tinge of tomato turns the rice red—with green peas and fried butternut squash, it makes a robust setting. The plates welcome individually portioned pork meatloaves, perfectly browned all around with less oil and less mess than traditional frying techniques. This comforting dinner emanates sunny vibes, from the gentle Mexican spices to the savoury-sweet BBQ sauce glaze.

Preparation

Fry the squash
Preheat the air fryer to 400°F. Lightly oil the basket. In a medium bowl, combine the squash, a drizzle of oil, ⅓ of the spices and S&P. Place in the air fryer basket and fry, 6 to 8 min., until tender. Return to the bowl and keep warm.

Cook the rice
Meanwhile, halve, peel and mince the shallot. In a medium pot, heat a drizzle of oil on medium-high. Add the tomato paste and ½ the shallot. Sauté, 30 sec. to 1 min., until fragrant. Add the rice, 1 ¼ cups water and 1 tsp salt (double the water and salt for 4 portions); bring to a boil. Reduce the heat, cover and simmer, 17 to 20 min., until the rice is tender and the water has been absorbed. Remove from the heat, cover and let sit for 5 min. Add the peas. Fluff and keep warm.

Prepare the meatloaves
Meanwhile, in a large bowl, combine the pork, panko, remaining shallot and spices, 1 egg (double for 4 portions) and S&P. Form into 2 small loaves (double for 4 portions).

Fry the meatloaves
Place the meatloaves* on a small piece of parchment paper in the air fryer basket and fry, 10 to 12 min., until browned and cooked through. Brush with the BBQ sauce and fry, 1 to 2 min., until glazed.

Finish & serve
Quarter the lime. To the pot of rice and peas, add the squash; stir well. Divide the rice between your plates. Top with the meatloaves (slice beforehand if desired). Garnish with the lime wedges. Bon appétit!
