with Creamy Kohlrabi & Brussels Slaw
These po boy sandwiches leave no crumbs! The Air Fryer brings to life a Southern treat, as battered salmon crisps to golden (with less oil and less mess than traditional frying techniques). Buns get air fried too, with a smear of spiced butter. Mount the sandwiches with a creamy slaw, starring kohlrabi and Brussels sprouts.

- 2 Scallions
- 1 Kohlrabi
- 60ml Mayonnaise
- 30ml Apple cider vinegar
- 30g Panko
- 2 Classic hamburger buns
- 10g Lively Garlic & Oregano spices (salt, paprika, garlic, vinegar powder, onion, red bell pepper, black pepper, sunflower oil, oregano, parsley, chives)

Preparation

Mise en place
Preheat the air fryer to 375°F. Lightly oil the basket. Place 2 tbsp butter (double for 4 portions) in a small bowl to soften. Remove the root ends of the Brussels sprouts; halve lengthwise, then thinly slice crosswise. Peel and cut the kohlrabi into matchsticks. Thinly slice the scallions crosswise.

Fry the salmon
In a shallow bowl, combine ½ the mayo, 1 tbsp water (double for 4 portions) and S&P. In a second shallow bowl, combine the panko and S&P. Pat the salmon dry with paper towel; season with ¾ of the spices and S&P. Coat the salmon* in the mayo mixture (letting any excess drip off), then in the panko (pressing to adhere). Place in the air fryer basket and fry, 4 to 6 min., until crisp and cooked through. Transfer to a plate.

Make the slaw
Meanwhile, in a large bowl, combine the vinegar, scallions, remaining mayo and 1 tbsp oil (double for 4 portions). Add the Brussels sprouts, kohlrabi and S&P.

Fry the buns
To the bowl of softened butter, add the remaining spices and S&P. Spread the cut-sides of the buns with the spiced butter. Working in batches if necessary, place the buns, cut-sides up, in the air fryer basket and fry, 1 to 2 min., until warmed through.

Plate your dish
Divide the bun bottoms between your plates. Top each bun bottom with a spoonful of the slaw, the salmon and a bun top. Serve the remaining slaw on the side. Bon appétit!
