Protein Swap | Ground Beef Barbacoa Tacos
with Fresh Tomatillo Salsa Verde
With fresh green tomatillos in their husks, a jalapeño pepper and pepitas at your fingertips, you know you’re in for a cooking fiesta. It wouldn’t be a Mexican party without lime and cilantro, too.
We will send you:
- 250g Canadian-raised lean ground beef
- 1 Jalapeño pepper
- 1 Lime
- 150g Shredded cabbage
- 225g Tomatillos
- 14g Cilantro
- 25g Roasted pepitas (pumpkin seeds)
- 30ml Organic BBQ sauce (no added sugar)
- 60ml Mayonnaise
- 6 Wheat flour tortillas
- 8g Smoky Mexican Moments spices (smoked paprika, cumin powder, garlic flakes, coriander powder, paprika, oregano, black peppercorns, allspice, cloves, cinnamon)

Preparation

Mise en place
- Remove the husks from the tomatillos; medium-dice.
- Juice the lime.
- Roughly chop the cilantro leaves and stems.
- Core and finely chop the jalapeño.

Make the salsa verde
- In a medium pan, heat a drizzle of oil on medium-high.
- Add the tomatillos and sauté, 3 to 4 min., until softened.
- Transfer to a medium bowl and add ⅓ of the lime juice, ½ the cilantro, ½ the jalapeño, a drizzle of oil and S&P.
- Wipe out and reserve the pan.

Make the slaw & spiced mayo
- Meanwhile, in a second medium bowl, combine the cabbage, 1 tbsp of the mayo (double for 4 portions), the remaining lime juice and cilantro, pepitas, a drizzle of oil and S&P.
- In a small bowl, combine the remaining mayo, a pinch of the spices and S&P.

Cook & coat the crumbled patties
- Crumble the patties.
- In the reserved pan, heat a drizzle of oil on medium.
- Add the crumbled patties, and the remaining jalapeño and spices.
- Cook, stirring occasionally, 3 to 4 min., until beginning to brown.
- Add the BBQ sauce and ¼ cup water (double for 4 portions).
- Cook, stirring often, 1 to 2 min., until beginning to thicken.

Warm the tortillas
- Meanwhile, wrap the tortillas in a slightly dampened paper towel.
- On a plate, microwave, in 10 sec. increments, until warm.

Finish & serve
- Divide the tortillas between your plates.
- Spread with the spiced mayo.
- Top with the crumbled patties, salsa verde and a spoonful of the slaw.
- Serve the remaining slaw on the side. Bon appétit!
