Small but curious cooks can join in the kitchen to help bring these bowls together. Fluffing couscous is a simple way to start, or stirring spices into ground chorizo, or just squeezing lemon for a refreshing tomato, cucumber and lettuce salad.

  • 500g Canadian-raised ground chorizo pork sausage meat
  • 2 Tomatoes
  • 1 Cucumber
  • 1 Head of curly leaf lettuce
  • 2 Garlic cloves
  • 200g Couscous
  • 90ml Labneh
  • 10g Mediterranean Shores spices (paprika, garlic, sea salt, roasted garlic, black pepper, sundried tomato, tomato, red bell pepper, mustard, oregano, natural flavour, rosemary)
  • 30ml Lemon juice

Preparation

Boil the couscous

  • In a small pot (or kettle), bring 2 cups water to a boil.

  • In a large bowl, combine the couscous and boiling water.

  • Cover and let sit for 5 min.

  • Fluff the couscous; season with S&P.

Cook the beef

  • Mince the garlic.

  • In a large pan, heat a drizzle of oil on medium-high.

  • Add the beef*; season with the spices. Cook, breaking up the meat, 4 to 6 min., until cooked through.

  • Add the garlic and cook, stirring often, 30 sec. to 1 min., until fragrant; season with S&P.

Mise en place

  • Meanwhile, halve the cucumber lengthwise; thinly slice crosswise on an angle.

  • Medium-dice the tomatoes.

  • Separate the lettuce leaves; tear the leaves.

Make the salad

  • In a second large bowl, whisk the lemon juice, 3 tbsp oil and S&P.

  • Add the cucumber, tomatoes and lettuce; toss well.

Finish & serve

  • In a small bowl, combine the labneh, 1 tbsp water and S&P.

  • Divide the couscous between your bowls.

  • Top with the salad and beef.

  • Dollop with the labneh. Bon appétit!
