Protein Swap | Sweet Sesame Salmon Air-Fry
with Jasmine Rice
What do you get when you make a stir-fry in the air fryer? A delicious Asian air-fry, of course! Shrimp and veggies bring bright colours and textures to the plate with minimal oil and clean up. (Bonus: no pot needed for the rice.)

- 15ml Minced garlic
- 1 Heirloom zucchini
- 1 Sweet pepper
- 227g Pre-cooked jasmine rice
- 15ml Toasted sesame oil
- 45ml Stir-fry sauce
- 45ml Sweet soy sauce
- 9g Black & white sesame seeds

Preparation
Mise en place
- Preheat the air fryer to 375°F. Lightly oil the basket.
- Halve, core and medium-dice the sweet pepper.
- Quarter the zucchini lengthwise; cut crosswise into ½ inch pieces.
- In a small bowl, make the sauce by combining the soy sauce, stir-fry sauce and sesame oil (start with ½).
Fry the shrimp & vegetables
- Pat the shrimp dry (remove the shells from the tails if desired); season with S&P.
- In a medium bowl, combine the sweet pepper, zucchini, garlic and ⅓ of the sauce.
- In a second medium bowl, combine the shrimp and ½ the remaining sauce.
- Place the vegetables in the air fryer and fry, 3 min., until beginning to soften.
- Place the shrimp* in the air fryer and fry, 3 to 5 min., until opaque and cooked through.
Warm the rice
- Meanwhile, poke small holes in the bag of rice.
- Microwave, 1 ½ to 2 min., until heated through.
Plate your dish
- Divide the rice between your plates.
- Top with the shrimp and vegetables.
- Garnish with the sesame seeds.
- Drizzle with the remaining sauce. Bon appétit!
