Works like a charm, this chicken Parm! Roasted garlic deepens the flavour of the chicken breasts—certified organic, so they’re better for you and the environment—as they cook, along with a few cherry tomatoes tossed into the pan. Then layer on not one cheese but two: grated mozzarella and Grana Padano aplenty! It’ll all broil to bubbly in the oven before serving. On the side, a multi-faceted salad shows off shredded cabbage, cherry tomatoes and nibbly sunflower seeds in our honey-Dijon vinaigrette.

  • 280g Cherry tomatoes
  • 45ml Sweet, Savoury Honey-Dijon vinaigrette
  • 25g Sunflower seeds

  • 30g Grated mozzarella
  • 25g Grana Padano (contains rennet)
  • 10g Garlic & Sweet Pepper spices (salt, garlic, sugar, red bell pepper, vinegar powder, green bell pepper, sunflower oil, paprika, turmeric, cayenne pepper)

Start the chicken
Preheat the oven to broil. Pat the chicken dry with paper towel; season with ⅔ of the spices and S&P. In a large, oven-safe pan, heat a drizzle of oil on medium-high. Add the chicken and cook, partially covered, 4 to 6 min. per side, until partially cooked.

Meanwhile, halve the tomatoes.

Make the salad
In a medium bowl, combine the cabbage, ½ the tomatoes, the sunflower seeds, vinaigrette and S&P.

Finish the chicken & broil the tomatoes
To the pan of chicken, add the garlic, remaining tomatoes and spices, and 2 tbsp water (double for 4 portions). Cook, stirring occasionally, 2 to 3 min., until beginning to soften. Top the chicken with the mozzarella and Grana Padano. Transfer to the oven and broil, 2 to 3 min., until the cheese is golden brown and the chicken* is cooked through.
