Pulled Chicken Tacos
with Cucumber Salad
Prepare the fillings and warm the tortillas, then let the kids take over taco night. They can load each round with shreds of spiced chicken and tomatoes, roasted in the oven. And complete the orders with toppings of tangy sliced cucumbers.

- 4 Canadian-raised chicken breasts (air chilled)
- 4 Cucumbers
- 1 Scallion
- 2 Tomatoes
- 30ml Sherry vinegar
- 12 Wheat flour tortillas
- 20g Mexican Chili-Lime blend (enriched wheat flour, salt, chili powder (contains sulphites), garlic, sugar, paprika, tapioca starch, coriander, black pepper, cumin, onion, oregano, citric acid, silicon dioxide, lime oil)

Preparation

Roast the chicken & tomatoes
- Preheat the oven to 450°F.
- Cut the tomatoes into ½ inch wedges.
- On a foil-lined sheet pan, toss with a drizzle of oil and S&P.
- Pat the chicken* dry and halve horizontally; rub with the spices and a drizzle of oil.
- Add to the pan and roast, flipping halfway, 10 to 15 min., until cooked through.
- Switch the oven to broil, 2 to 3 min., if extra colour is desired.

Mise en place
- Meanwhile, halve the cucumbers lengthwise; thinly slice crosswise.
- Thinly slice the scallion crosswise.

Make the salad
- In a large bowl, combine the cucumbers, scallion, vinegar, a drizzle of oil and S&P.

Warm the tortillas
- Meanwhile, stack and tightly wrap the tortillas in aluminum foil.
- Warm directly on an oven rack, 6 to 8 min., until heated through.
- Keep wrapped until ready to serve.

Shred the chicken
- Transfer the chicken to a bowl. Using two forks, shred the chicken (or thinly slice).
- Add the tomatoes and S&P; toss well.

Plate your dish
- Divide the tortillas between your plates.
- Top with the chicken, tomatoes and salad. Bon appétit!
