Quick Dukkah-Spiced Ground Beef
Roasted Garlic Hummus, Minty Cuke Salad & Pita
The ultimate in dukkah-dence! The renowned spice mix, popular in the Middle East and Egypt, bestows its blend of sesame seeds, roasted chickpeas, coriander, cumin and mint on these plushly lined plates. Start by smoothing on hummus amped with roasted garlic, and then layer up with ground beef nicely browned with butternut squash. Pair that with a quick cucumber and mint salad and warm pita bread, and you’ll be revelling in luxury within a short time limit.

- 200g Diced butternut squash
- 1 Bunch of mint
- 3 Cucumbers
- 15ml Red wine vinegar
- 120g Hummus
- 15g Minced roasted garlic
- 2 Pita
- 10g Dukkah (white sesame seeds, roasted chickpeas, coriander, cumin, salt, black pepper, mint)

Preparation
Cook the beef & squash
Preheat the oven to 450°F. In a medium pan, heat a drizzle of oil on medium-high. Add ½ the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the beef* and squash; season with ⅔ of the dukkah and S&P. Cook, breaking up the meat, 4 to 6 min., until cooked through and the squash is tender.
Mise en place
Meanwhile, halve the cucumbers lengthwise; using the side of your knife, gently smash the halves until slightly flattened. Cut into large chunks. Pick the mint leaves off the stems; roughly chop the leaves. In a small bowl, combine the hummus, remaining garlic and S&P.
Make the cucumber salad
In a medium bowl, combine the cucumbers, vinegar, ⅓ of the mint, a drizzle of oil, the remaining dukkah and S&P.
Warm the pita
Warm the pita directly on an oven rack, 1 to 2 min., until soft and pliable. Transfer to a cutting board and cut into wedges.
Plate your dish
Spread the garlic hummus out along the side of your plates. Top with the beef and squash. Garnish with the remaining mint. Serve the pita and cucumber salad on the side. Bon appétit!
