Tacos know no limits, in terms of time, tastes and textures. You’ll turn around this Lebanese-inspired twist in just 10 minutes, and take them into delightfully different territory. Start by smoothing earthy hummus over each oven-warmed flour tortilla. Then drop in ground beef, nicely browned down with that distinctive blend of za’atar herbs and spices. Provide some extra punch from mini peppers roasted to sweetness with garlic, and pick it up from there.

Preparation

Roast the sweet peppers
Preheat the oven to 450°F. On a lined sheet pan, toss the sweet peppers with ½ the garlic, a drizzle of oil and S&P. Roast, stirring halfway, 8 to 10 min., until tender.

Warm the tortillas
Meanwhile, stack and tightly wrap the tortillas in aluminum foil. Warm directly on an oven rack, 6 to 8 min., until heated through.

Cook the beef
Meanwhile, in a medium pan, heat a drizzle of oil on medium-high. Add the remaining garlic and sauté, 30 sec. to 1 min., until fragrant. Add the beef*; season with ½ the za’atar and S&P. Cook, breaking up the meat, 4 to 6 min., until cooked through.

Make the carrot slaw
Meanwhile, in a medium bowl, combine the carrots, sunflower seeds, vinaigrette and S&P.

Plate your dish
Divide the tortillas between your plates. Spread with the hummus. Top with the beef and carrot slaw. Garnish with the remaining za’atar. Serve the sweet peppers on the side. Bon appétit!
