Load each warm tortilla with ground beef gently browned with scallion and a Tex-Mex spice blend that’s big on paprika and cayenne, with hints of celery and hickory. Finish with a creamy chayote and carrot slaw spiked with lime, and cushion each taco with spiced sour cream.

Preparation

Cook the beef
Preheat the oven to 450°F. Thinly slice the scallion crosswise, separating the white bottom and green top. In a large pan, heat a drizzle of oil on medium-high. Add the white bottom of the scallion and sauté, 30 sec. to 1 min., until fragrant. Add the beef*; season with ¾ of the spices and S&P. Cook, breaking up the meat, 4 to 6 min., until cooked through.

Warm the tortillas
Meanwhile, stack and tightly wrap the tortillas in aluminum foil. Warm directly on an oven rack, 6 to 8 min., until heated through.

Mise en place
Meanwhile, peel and grate the chayote (using a strainer, squeeze the excess water). Halve the tomatoes. Juice the lime.

Make the slaw
In a large bowl, whisk the lime juice, ¼ of the sour cream and 2 tbsp oil. Add the chayote, carrots, green top of the scallion, all but a pinch of the remaining spices and S&P; toss well.

Make the spiced sour cream & serve
In a small bowl, combine the remaining sour cream and spices. Divide the tortillas between your plates. Spread with the spiced sour cream. Top with the beef, slaw and tomatoes. Bon appétit!
