Quick Pancetta Naan Pizzas
with Mozzarella, Cherry Tomatoes & Nice Little Salad
There should be a word for the particular pleasure of getting your own individual pizza. Especially when it’s super quick and topped with salty morsels of oven-crisped pancetta (the broiler gets them good and golden-browned). Swipe springy rounds of naan with tomato sauce, give them some mozzarella and, for contrast, add tomatoes and roasted peppers. On the side, baby greens and veggies in an Italian-inspired vinaigrette is our definition of a nice little salad.

- 140g Cherry tomatoes
- 90g Baby greens (lettuce mix, baby spinach, kale or arugula)
- 30ml Cold-pressed Italian vinaigrette
- 100ml Tomato sauce
- 2 Roasted peppers
- 60g Grated mozzarella
- 2 Naan
- 7.5g Bell Pepper & Olive spices (garlic, red bell pepper, dried black olives, basil, oregano, salt, parsley, lemon, sunflower oil, black pepper)

Preparation
Cook the pancetta
Preheat the oven to broil. In a large, high-sided pan, heat a drizzle of oil on medium-high. Cook the pancetta*, stirring frequently, 2 to 3 min., until golden brown and crispy; season with ⅓ of the spices.
Mise en place
Meanwhile, halve the tomatoes; toss with a drizzle of oil and ½ the remaining spices. Thinly slice the roasted peppers.
Assemble the pizzas
Arrange the naan on a lined sheet pan. Spread with the tomato sauce. Top with the pancetta, ½ the tomatoes, ½ the roasted peppers, the cheese, a drizzle of olive oil and the remaining spices.
Broil the pizzas
Broil the pizzas, 3 to 5 min., until the cheese is melted and beginning to brown.
Make the salad
Meanwhile, in a large bowl, combine the vinaigrette, baby greens, and remaining tomatoes and roasted peppers.
Finish & serve
Transfer the pizzas to a cutting board and cut into wedges. Divide the pizzas between your plates. Serve the salad on the side. Bon appétit!
