Are udon with that? In just 10 minutes, you will be! This recipe is a parent’s dream: it comes together without much fuss and it’s sure to please even the fussiest kiddos. Soft and slurpy udon noodles are the big draw, with deliciously spiced beef and loads of veggies.

  • 1 Lime
  • 225g Asian greens (yu choy or gai lan)
  • 1 Scallion
  • 450g Fresh udon noodles
  • 90ml Sweet soy sauce
  • 12g Mellow Sesame spices (brown sugar, sea salt, white sesame, garlic, canola oil, ginger, paprika flavour, black pepper, cellulose)

Mise en place

  • Bring a large pot of salted water to a boil.

  • Thinly slice the scallion crosswise.

  • Remove the bottom inch of the gai lan stems; roughly chop the leaves and stems.

  • Quarter the lime.

  • Grate the carrots.

Boil the noodles

  • Add the noodles to the pot of boiling water; stir gently to separate.

  • Boil, 6 to 8 min., until al dente.

  • Reserving ½ cup cooking water, drain and toss with a drizzle of oil to prevent sticking.

Cook the beef

  • Meanwhile, in a large, high-sided pan, heat a drizzle of oil on medium-high.

  • Add ½ the scallion and sauté, 30 sec. to 1 min., until fragrant.

  • Add the beef*; season with ⅔ of the spices and S&P. Cook, breaking up the meat, 3 to 5 min., until cooked through.

Cook the vegetables & combine the noodles

  • To the pan, add the gai lan and ½ the carrots. Cook, stirring often, 2 to 3 min., until beginning to soften.

  • Add the noodles, soy sauce, juice of 2 lime wedges and ½ the reserved cooking water; stir well.

  • If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.

Make the carrot salad & serve

  • In a medium bowl, combine the remaining carrots, scallion and spices, and the juice from the remaining lime wedges.

  • Divide the noodles between your bowls.

  • Top with the carrot salad. Bon appétit!
