Saucy Vegetarian Poutine
with Lentils, Sweet Pepper & Green Peas
Poutine on the ritz! We’re giving this Québécois classic comfort food a vegetarian makeover, just in time for families across the country to celebrate National Poutine Day. After all, taters, cheese and gravy are about as kid-friendly as it gets. Add a hearty portion of lentils, sautéed sweet pepper and peas to the dish, and splash in some BBQ sauce to sweeten and deepen the sauce. It all goes along with oven-roasted fries and those signature squeaky curds, bien sûr!

- 1 Sweet pepper
- 540ml Lentils (canned)
- 60ml BBQ sauce
- 20g All-purpose flour
- 300g Green peas
- 90ml Vegetable demi-glace
- 200g Cheese curds
- 24g Smokin’ Sweetness spices (sugar, paprika, salt, onion, cumin, coriander, mustard, garlic, sunflower oil, black pepper, cayenne pepper, smoked hickory flavour, brown sugar)

Preparation
Roast the fries
Preheat the oven to 450°F. Cut the potatoes into fries. On a lined sheet pan, toss with a drizzle of oil, ⅓ of the spices and S&P. Roast, flipping halfway, 25 to 30 min., until lightly browned and tender.
Mise en place
Meanwhile, drain and rinse the lentils. Core and thinly slice the sweet pepper.
Start the vegetables
In a large pan, heat a drizzle of oil on medium-high. Add the sweet pepper and sauté, 3 to 4 min., until beginning to soften. Add the flour and remaining spices. Cook, stirring frequently, 30 sec. to 1 min., until fragrant.
Finish the vegetables & make the sauce
To the pan of sweet pepper, add the lentils, demi-glace, BBQ sauce, 2 cups water and S&P; bring to a boil. Reduce the heat to simmer and cook, partially covered, stirring occasionally, 4 to 6 min., until slightly thickened. Add the peas and ⅓ of the cheese. Cook, stirring frequently, 1 to 2 min., until warmed through.
Plate your dish
Divide the fries between your bowls. Top with the vegetables and sauce. Garnish with the remaining cheese. Bon appétit!
