Care for a little comfort at the end of the day? Whether coming from school or work, everyone will simmer down and settle in when they see this soothing stew in front of them. The meat of choice is shredded chicken thighs, which make for oh-so-tender mouthfuls along with diced sweet potatoes and broccoli tops. Rest them in a rich broth made with garlic, demi-glace and a touch of cream—with homemade garlic focaccia croutons providing the soundtrack.

Preparation

Cook & shred the chicken
Pat the chicken dry with paper towel; season with ½ the spices. In a large, high-sided pan, heat a drizzle of oil on medium-high. Add the chicken* and cook, partially covered, 4 to 6 min. per side, until browned and cooked through. Transfer to a shallow bowl. Using two forks, shred the chicken.

Meanwhile, preheat the oven to 450°F. Medium-dice the sweet potatoes and focaccia. Mince the garlic. Place 3 tbsp butter in a large bowl to soften.

Start the stew
In a large pot, heat a drizzle of oil and 2 tbsp butter on medium-low. Add the flour, ¾ of the garlic and the remaining spices. Cook, stirring frequently, 2 to 3 min., until golden brown. Add the sweet potatoes, cream, demi-glace, 4 cups water and S&P; stir well.

Finish the stew
Cover the stew and cook, stirring occasionally, 6 to 8 min., until the sweet potatoes are almost tender. Add the broccoli (halve if large) and chicken. Cook, partially covered, 6 to 8 min., until the broccoli and sweet potatoes are tender.

Make the croutons
Meanwhile, to the bowl of softened butter, add the remaining garlic; stir well. Microwave, in 15 sec. increments, until melted; season with S&P. Add the focaccia; toss well. Arrange on a lined sheet pan and bake, 4 to 6 min., until golden brown.

Plate your dish
Divide the stew between your bowls. Top with the croutons. Bon appétit!
