Old Southern tradition. New kitchen technology. It’s inspired by a boil, but we’re fixin’ to prepare this all-in-one feast in the air fryer, using our tasty new Canadian-raised chicken sausages. Spiced butter with parsley and lemon peps it up just so, y’all!

  • 450g Baby potatoes
  • 2 Ears of corn
  • 2 Garlic cloves
  • 1 Lemon
  • 14g Parsley
  • 5g Down by the Bay spices (celery salt (salt, celery seed, canola oil, cellulose), black pepper, mustard, bay leaves, nutmeg, paprika, Cayenne pepper, cardamom, cloves, ginger, mace)

Preparation

Fry the potatoes

  • Preheat the air fryer to 400°F. Lightly oil the basket.

  • Medium-dice the potatoes. In a medium bowl, toss with a drizzle of oil and S&P.

  • Place in the air fryer and fry, shaking halfway, 14 to 16 min., until browned and tender.

  • Return to the bowl.

Mise en place

  • Meanwhile, mince the garlic.

  • Cut the corn crosswise into thirds. Toss with a drizzle of oil and S&P.

  • Roughly chop the parsley leaves and stems.

  • Zest and quarter the lemon.

Fry the corn & sausages

  • Place the corn and sausages* in the air fryer and fry, shaking halfway, 8 to 10 min., until tender and cooked through.

Make the old bay butter

  • Meanwhile, in a small bowl, microwave 2 tbsp butter (double for 4 portions) and the garlic, in 15 sec. increments, until melted.

  • Add the lemon zest, spices (start with ½ for a milder flavour) and parsley; stir well.

Plate your dish

  • Divide the potatoes, sausages and corn between your plates.

  • Drizzle with the old bay butter.

  • Garnish with the lemon wedges. Bon appétit!
