Spicy Grilled Vietnamese Lemongrass Beef Skewers
Lime-Spritzed Tindora & Kohlrabi Salad
Vietnamese references shine in this summery spread. Minced lemongrass makes grilled ground beef skewers super-fragrant. They land on a refreshing salad showcasing two more adventurous veggies: tropical tindoras are similar to bitter melon while kohlrabi is the king of crispness.

- 340g Canadian-raised lean ground beef (high-protein serving)
- 100g Matchstick carrots
- 200g Tindoras
- 1 Kohlrabi
- 2 Limes
- 15g Minced lemongrass
- 15ml Sambal oelek
- 7g Honey
- 4 Bamboo skewers
- 9g Nori & Lemongrass spices (dehydrated vegetables, sea salt, seaweed, ginger, sunflower oil, lemongrass)

Preparation

Mise en place
Heat the BBQ on high, making sure to oil the grill first. Place the skewers in a shallow bowl; cover with water. Quarter the tindoras lengthwise. Peel and cut the kohlrabi into matchsticks. Juice the limes.

Prepare & grill the skewers
In a large bowl, combine the beef, lemongrass, ½ the sambal oelek, ½ the honey, ⅔ of the spices and S&P. Form into 4 long oval-shaped pieces (double for 4 portions). Drain the skewers and thread each one with the beef*; drizzle with oil. Add to the BBQ and grill, turning often, 6 to 8 min., until cooked through.

Make the salad
In a second large bowl, combine the lime juice, remaining honey, sambal oelek and spices, 1 tbsp oil (double for 4 portions) and S&P. Add the kohlrabi, tindoras and carrots.

Plate your dish
Divide the skewers and salad between your plates. Bon appétit!
