Sweet & Sour Beef Meatballs
with Roasted Peppers & Jasmine Rice
When you’ve got a sweet and sour glaze, you’ve got everyone’s tastes covered. If the gleam on these beef meatballs doesn’t get the kids’ attention, the bright colour of roasted sweet peppers sure will. Serving it all over fluffy jasmine rice is the clincher.

- 2 Sweet peppers
- 30g Panko
- 30ml Teriyaki glaze
- 320g Jasmine rice
- 90ml Pineapple chili sauce
- 12g Mellow Sesame spices (brown sugar, sea salt, white sesame, garlic, canola oil, ginger, paprika flavour, black pepper, cellulose)

Preparation

Cook the rice
- Preheat the oven to 450°F.
- In a medium pot, combine the rice, 3 cups water and a big pinch of salt; bring to a boil.
- Reduce the heat, cover and simmer, 14 to 16 min., until the rice is tender and the water has been absorbed.
- Remove from the heat and let sit, covered, for 5 min. Fluff the rice.

Roast the sweet peppers
- Meanwhile, halve, core and medium-dice the sweet peppers.
- On a lined sheet pan, toss with a drizzle of oil, ½ the spices and S&P.
- Roast, stirring halfway, 16 to 18 min., until softened.

Prepare the meatballs
- Meanwhile, in a large bowl, combine the beef, panko, 1 egg, the remaining spices and S&P.
- Form into 16 meatballs.

Cook & coat the meatballs
- In a large pan, heat a drizzle of oil on medium-high.
- Add the meatballs* and cook, partially covered, turning occasionally, 9 to 11 min., until browned and cooked through.
- Drain any excess fat from the pan.
- Add the teriyaki glaze, pineapple chili sauce and 2 tbsp water. Cook, stirring often, 1 to 2 min., until the meatballs are coated.

Plate your dish
- Divide the rice between your bowls.
- Top with the sweet peppers and meatballs. Bon appétit!
