Thai-Style Ground Pork & Veggie Bowls
with Crunchy Toasted Peanuts & Garlic Rice
What makes Thai cuisine so enticing is the way it manages to bring together various bold flavours so that they merge as one while each remaining distinct. To make this magic in a bowl, this recipe gets off to a solid start with a bed of white rice infused with the aroma of garlic. The flavour keeps on coming with a quick mélange of ground pork, Nantes carrots and mini peppers seasoned with a winning duo of sweet soy sauce and lime juice. Preparation

Cook the rice
Mince the garlic. In a medium pot, heat a drizzle of oil on medium-high. Add ½ the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the rice, 2 ½ cups water and a big pinch of salt; bring to a boil. Reduce the heat, cover and simmer, 17 to 20 min., until the rice is tender and the water has been absorbed. Remove from the heat and let sit, covered, for 5 min. Fluff the rice.

Mise en place
Meanwhile, core and thinly slice the sweet peppers crosswise. Thinly slice the carrots crosswise. Zest and juice the lime.

Toast the peanuts
In a large, high-sided pan, heat a drizzle of oil on medium. Add the peanuts and toast, stirring frequently, 1 to 2 min., until fragrant. Transfer to a bowl and reserve the pan.

Start the pork
In the same pan, heat a drizzle of oil on medium-high. Add the pork and cook, breaking up the meat, 2 to 3 min., until lightly browned and partially cooked; season with S&P. Add the remaining garlic and cook, stirring frequently, 1 to 2 min., until fragrant.

Finish the pork & cook the vegetables
To the pan of pork, add the carrots and sweet peppers. Cook, stirring frequently, 6 to 8 min., until the vegetables are crisp-tender and the pork* is cooked through. Add the soy sauce and lime juice. Cook, stirring frequently, 1 to 2 min., until combined.

Finish & serve
To the pot of rice, add the lime zest and S&P; stir well. Divide the rice between your bowls. Top with the pork and vegetables. Garnish with the peanuts. Bon appétit!
