Do the two step! Dinner doesn’t get any easier—or any tastier! With these streamlined recipe instructions, you make the fewest moves possible. All you have to do is pop your ingredients into a hot oven: throw the cherry tomatoes in whole, along with garlic and pearl couscous, uplifted with a splash of apple cider vinegar. Top that same single pan with warmly spiced chicken breasts, and fling in some leafy greens with butter for the finale.

  • 120g Baby greens (baby spinach or kale)
  • 280g Cherry tomatoes
  • 30ml Apple cider vinegar
  • 165g Multicoloured pearl couscous
  • 30ml Vegetable demi-glace
  • 10g Mediterranean Shores spices (paprika, garlic, salt, roasted garlic, black pepper, sun-dried tomato, tomato, red bell pepper, oregano, mustard, rosemary)

Start the bake
Preheat the oven to 450°F. Pat the chicken dry with paper towel; season with ½ the spices and S&P. In a large, high-sided, oven-safe pan, heat a drizzle of oil on medium-high. Add the chicken and cook, 2 to 3 min. on one side, until partially cooked. Add the tomatoes, garlic, couscous, 2 cups water (double for 4 portions), the demi-glace, vinegar (start with ½), remaining spices and S&P; stir well.

Finish the bake & serve
Medium-dice 2 tbsp butter (double for 4 portions). Transfer the pan to the oven and bake, 20 to 22 min., until the couscous is tender and the chicken* is cooked through. Remove from the oven and transfer the chicken to a cutting board. To the pan of couscous, add the spinach, butter and S&P; stir well. Divide the couscous between your plates. Top with the chicken (slice beforehand if desired). Bon appétit!
