There are 1000 ways to level up instant ramen. This recipe takes viral hacks higher with fresh noodles, coated in buttery sweet soy and garlic sauce. Browned ground beef is an easy energy boost, with a garnish of Japanese furikake seasonings. The easiest veggie side ever: sizzling string peas and green beans with garlic.

  • 15ml Minced garlic
  • 100g String peas (sugar snap peas or snow peas)
  • 300g Green beans
  • 225g Fresh ramen noodles
  • 45ml Sweet soy sauce
  • 15ml Rice vinegar
  • 10g Mild Furikake (black sesame seeds, white sesame seeds, crushed nori, sugar, kosher salt)

Preparation

Mise en place
Bring a medium pot of salted water to a boil. Remove the stem ends of the green beans. Remove the stem ends of the string peas; pull off the tough string that runs the length of each pod.

Cook the beef
In a large pan, heat a drizzle of oil on medium-high. Add the beef*; season with S&P. Cook, breaking up the meat, 4 to 6 min., until cooked through. Transfer to a bowl, leaving any browned bits in the pan. Reserve the pan.

Boil the noodles
Meanwhile, add the noodles to the pot of boiling water; stir gently to separate. Boil, 1 to 3 min., until al dente. Drain and toss with a drizzle of oil to prevent sticking.

Cook the vegetables
In a second large pan, heat a drizzle of oil on medium-high. Add the green beans, string peas and S&P. Sauté, 2 to 3 min., until beginning to soften. Add 1 tbsp water (double for 4 portions) and ⅓ of the garlic. Cook, partially covered, 1 to 2 min., until crisp-tender; season with ½ the mild furikake.

Combine the noodles & serve
In the reserved pan, heat 4 tbsp butter (double for 4 portions) on medium-high. Add the remaining garlic and sauté, 1 to 2 min., until beginning to brown; season with S&P. Add the soy sauce, vinegar and ⅓ cup water (double for 4 portions). Cook, stirring often, 1 to 2 min., until thickened. Add the noodles and beef. Cook, stirring often, 1 to 2 min., until the noodles and beef are coated and combined. Divide the noodles between your bowls. Garnish with the remaining mild furikake. Serve the vegetables on the side. Bon appétit!
